If you love pickling and are looking for something new, try these great recipes.
Pickled Peppers
· Bunch of peppers
· 3 cups white vinegar
· 1 cup water
· 1 tablespoon Kosher salt
· Add sugar or any spices you want
· Optional: Calcium chloride (1/4 teaspoon per pint jar)
Eggs-n-Beets
· 8 large peeled hardboiled eggs
· 2 cans whole pickled beets, juice reserved
· 1 small onion, chopped
· 1 cup white sugar
· ¾ cup cider vinegar
· 12 whole cloves
· 2 bay leaves
· ½ teaspoon salt
· 1 pinch ground black pepper
Junk Jar
· 2 cups vinegar
· 1 cup water
· 2 tablespoons kosher salt
· Spices
· Assorted vegetables (and even some meat, like ham).
Keep in refrigerator and add ingredients and additional brine as needed.
Sauerkraut
· Finely cut fermented cabbage.
· Salt cabbage and let sit. Put in crock or jar and smash down.
· Add a small amount of brine to cover if needed (2 tsp in ½ cup water).
· Leave in dark place at room temp for about 2 weeks.
Low Sodium Brine
· 1 cup white vinegar
· 1 cup apple cider vinegar
· 1/2 cup sugar
· 2 tsp ground black pepper
· 2 Tbsp minced garlic
· 1 bay leaf
· 1 tsp mustard seed
· 1 tsp celery seed
· 1 tsp dill weed
· 1/2 tsp cumin seed
· 1 tsp liquid smoke
· ¼ tsp crushed red pepper flakes optional
Beer Pickles
· 1 Bottle IPA or pale ale
· 1/4 cup water
· 2 cups vinegar, (apple cider or wine)
· 1 cup sugar
· 1 1/2 tbsp salt
· 1/4 tsp peppercorns
· 1/4 tsp yellow mustard seed
· 1/4 tsp black mustard seed
· 2 cloves garlic smashed
· 1/2 tsp chili flakes
· 1/4 tsp pickling spice (optional)
· 1 jalapeno thinly sliced
· 1 Fresno Chile thinly sliced
Vodka Pickles
· 2 cups Water
· 4 tablespoons salt
· 1 cup Cider Vinegar
· 1 cup vodka
· 1 jalapeno pepper
· Smashed cloves of garlic
· Bunch of fresh dill
· Spices – peppercorns, coriander, etc.
