We All Scream for Ice Cream

It’s almost summer — so of course, we all scream for ice cream. But should we?
Ice cream is loaded with fat and sugar. Yes, the fat and protein help blunt the insulin spike a bit, but there’s no getting around the core truth: ice cream is fattening. An occasional treat? Absolutely. But a steady diet? That’s a reliable way to ensure your body isn’t exactly beach-ready.
Fortunately, there is something that can satisfy your sweet tooth without the metabolic consequences. Below is a recipe I’ve been fine-tuning for a while — high in protein, fiber, and full of rich chocolate flavor. It may sound unusual at first, but give it a shot. I eat this a lot.
Alex’s Chocolate Protein Pudding V2 (No Stevia Ever Edition)
Ingredients:
1 block silken tofu (about 12 oz / 340g)
2 tbsp chia seeds
1 scoop vegan protein powder (unsweetened or lightly sweetened; chocolate or unflavored)
1 tbsp collagen powder
2 large Medjool dates, pitted
1 tbsp monk fruit-erythritol blend (e.g. Lakanto)
1 tsp maple syrup (optional; can reduce to ½ tsp)
3 tbsp unsweetened cocoa powder (use high quality: Valrhona, Guittard, Ghirardelli, etc.)
1 tsp vanilla extract
1/8 tsp fine sea salt
2–4 tbsp unsweetened almond milk (or water) to adjust texture
Optional Add-Ins:
1 tsp instant espresso powder (enhances chocolate flavor)
Sprinkle of cacao nibs on top
Pinch of cinnamon or cayenne for extra depth
Directions:
In a high-speed blender or food processor, add tofu, chia seeds, protein powder, collagen, cocoa powder, salt, vanilla, dates, monk fruit blend, and maple syrup.
Blend, slowly adding almond milk or water, until smooth and creamy.
Continue blending until no visible chia or date bits remain.
Taste and adjust sweetness or texture if needed.
Refrigerate for at least 2 hours (overnight is even better).
Serve chilled, with optional toppings.

Protein: 30–35g
Net carbs: 10–15g
Fiber: 8g
Fat: 7–9g
Sugar: 8–10g natural
