Great soup isn’t about complicated recipes—it’s about smart ingredients. One of our favorites is nutritional yeast, a savory pantry staple that adds depth and richness without overpowering a dish.


Often called “nooch,” nutritional yeast has a mild, cheesy, umami flavor that works especially well in soups, stews, and brothy dishes. It’s subtle, comforting, and surprisingly versatile.


Why Nutritional Yeast Works So Well in Soup


Nutritional yeast helps soups taste more complete. A small amount can:


  • Add savory depth without extra salt

  • Make vegetable- and bean-based soups feel richer

  • Help spices and herbs blend together more smoothly

  • Create a fuller mouthfeel without cream or dairy


It’s one of those ingredients that quietly improves everything in the pot.

Nutritional yeast is also valued for its nutritional profile. It’s commonly known for:


  • Plant-based protein

  • B vitamins (including B12 in fortified versions)

How We’re Using It Going Forward


Starting this year, nutritional yeast will be included as a learning topic in all new in-person SoupMaster workshops. We’ll cover how it works, when to use it, and how to incorporate it into everyday soups at home.


It will also be featured in our Become a SoupMaster Kit: Superfoods Edition, where participants explore ingredients that add both flavor and nutritional value to homemade soups.
