Ingredients
1 cup heavy whipping cream
2 tablespoons unsweetened cocoa powder
1/2 teaspoon vanilla extract
Stevia equivalent to 2 tablespoons of sugar (adjust according to the conversion rate of the stevia product you're using)
A pinch of salt
Optional toppings: Berries, grated dark chocolate, or nuts for garnish
Place a mixing bowl and the beaters of an electric mixer in the fridge for about 15-30 minutes to chill. Pour the heavy whipping cream into the chilled bowl. Using an electric mixer, whip the cream on medium speed until it starts to thicken. Sift the cocoa powder into the cream to avoid lumps. Add the stevia, vanilla extract, and a pinch of salt. Continue to whip the mixture until it forms stiff peaks. Be careful not to overbeat, as it can turn the cream into butter. Taste the mousse and adjust the sweetness if necessary. Remember, stevia is much sweeter than sugar, so add sparingly. Spoon the chocolate mousse into serving dishes and garnish with your choice of berries, grated dark chocolate, or nuts before serving.
