1 large can (28oz) crushed tomatoes
1 quart low sodium chicken stock
1 onion
1 celery
1 carrot
Pinch of cayenne
3-finger pinch dried thyme or 3-4 stalks fresh thyme
Heavy cream, light cream, or coconut milk (about 1 cup)
Add all ingredients except cream to pot. Bring to boil and simmer for 25 minutes. Blend thoroughly. Add desired amount of cream/milk and season to taste.
