If you often find yourself throwing away potato peels, you might want to rethink that habit. These discarded bits can actually be turned into a delicious and nutritious soup. Below is a simple recipe that transforms potato peels into a culinary delight.


Ingredients:

  • Peels from 4-5 large potatoes (washed and scrubbed)

  • 1 medium onion, diced

  • 2 garlic cloves, minced

  • 4 cups vegetable broth

  • 1 cup milk (any kind)

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 tablespoon olive oil

  • Optional: herbs like thyme or parsley for garnish

Instructions:

  1. Heat olive oil in a large pot over medium heat.

  2. Add diced onion and garlic, sauté until translucent.

  3. Add potato peels and stir.

  4. Pour in vegetable broth, bring to a boil, then simmer for 20 minutes.

  5. Puree the soup until smooth.
