Low Sodium Green Gazpacho

Ingredients:


  • 2 medium zucchinis, rough chopped

  • 2 medium cucumbers, rough chopped

  • 1 yellow bell pepper, rough chopped

  • 1 bunch green onions, roughly chopped

  • 2 garlic cloves, roughly chopped

  • 1/2 cup fresh parsley leaves

  • 1/2 cup fresh cilantro leaves

  • 1/4 cup fresh mint leaves

  • 1/4 cup fresh basil leaves

  • 1/4 cup fresh lemon juice

  • 1/4 cup olive oil

  • 1/4 cup water

  • Salt and pepper to taste

Instructions:

  1. In a blender or food processor, combine all ingredients.

  2. Blend until smooth.

  3. Season with salt and pepper to taste.

  4. Chill in the refrigerator for at least 30 minutes before serving.

  5. Add some finely diced cucumber before serving for an added crunch.
