1 bell pepper, sliced

1/4 cup pumpkin seeds

1/4 cup hummus

Juice of 1 lemon

Instructions:

In a medium saucepan, combine the quinoa and water or vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff the quinoa with a fork.


While the quinoa is cooking, prepare the remaining ingredients. Rinse and drain the chickpeas, and slice the avocado, cucumber, bell pepper, and radishes.


In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.


To assemble the Buddha bowls, divide the cooked quinoa evenly among four bowls. Arrange the mixed greens, chickpeas, avocado, carrot, cucumber, bell pepper, and radishes on top of the quinoa.
