This recipe has quickly become a favorite around Therapy Gardens Headquarters. The green apple brings a little sweetness that's rounded out beautifully with fresh sage and a touch of coconut milk. Low sodium, low sugar, great taste.
3 Butternut squash, cubed
4-6 Green apples, chopped with skins
3+ Tbsp. Fresh sage, sliced thin
2 Minced garlic cloves
Chicken or vegetable stock to cover
Coconut milk to taste
Salt and pepper to taste
Add contents to pot (except coconut milk), and barely cover with stock. Simmer until soft, blend, add coconut milk and season to taste.
