Butternut Squash, Green Apple & Sage Soup

This recipe has quickly become a favorite around Therapy Gardens Headquarters. The green apple brings a little sweetness that's rounded out beautifully with fresh sage and a touch of coconut milk. Low sodium, low sugar, great taste.


Ingredients

  • 3 Butternut squash, cubed

  • 4-6 Green apples, chopped with skins

  • 3+ Tbsp. Fresh sage, sliced thin

  • 2 Minced garlic cloves

  • Onion

  • Chicken or vegetable stock to cover

  • Coconut milk to taste

  • Salt and pepper to taste

Add contents to pot (except coconut milk), and barely cover with stock. Simmer until soft, blend, add coconut milk and season to taste.
